This unique chili recipe uses beef stew meat instead of ground beef for an interesting change.

1 lg. onion, finely chopped

1 green pepper, finely chopped

1 lb. lean beef for stew, cut into 1/2″ cubes

1 (16 oz.) can kidney beans, drained

1 (8 oz.) can tomato sauce

1 (4 oz.) can chopped green chilies, drained

1 tbsp. chili powder, use 2 tbsp. for spicy chili

1/4 tsp. garlic powder

1/4 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. pepper

Shredded cheddar cheese (opt.)

1. Melt 1 tablespoon butter in a large pot. Saute onion and green pepper in butter.

2. Add beef stew meat and stir until pieces are brown.

3. Stir in remaining ingredients except cheese. Simmer for 30 minutes, stirring occasionally.

4. A delicious serving suggestion. Sprinkle individual servings with cheese and top with a spoonful of sour cream.
